A full-bodied, long and balanced red wine vinified with 70% Syrah, 20% Carignan and 10% Grenache and aged in Frmacese oak.
Vinification and aging: the grapes are vinified in small capacity vats (150 hl) to improve the maceration which lasts 25 days; the fermentation temperature is about 25 °. The wine is relieved, drawn off or aerated on a daily basis. The refinement lasts 12 months for 1/3 in new barrels, 1/3 in wine barrels and 1/3 in lined concrete tanks; and then proceed with bottling. Aging potential: can be stored for 8 to 10 years. Intense red wine with violet reflections. The nose is rich in aromas of red fruit jam (morello cherry). Very soft on the palate, its structure is very elegant with already silky tannins. We find aromas of tapenade and also of garrigue such as thyme. Very nice sensations. Food-wine pairing: Excellent with a fragrant lamb shank with Provençal hints.
