This cuvée comes from the best plots of the Caritatis terroir, chosen just before the harvest for their particularly accentuated aromatic characteristics, capable of revealing the magnificent potential of Ventoux: the Grenaches were selected mainly from the “southern” clayey-limestone terroir. Annunciation in front of the Clos des Sœurs, on the old vines of the monks and on the terraces of the monks and winegrowers, in Barroux and Beaumont, mostly on deep clayey-limestone soils that bring fat and power with this characteristic freshness of our mountain the area. The Syrahs were harvested from the old vines in the Clos des Sœurs and on the terraces of the winemakers in Barroux, selected for their very pronounced notes of red and black fruits. The old carignani grow in deep clays at sunrise in front of the monastery of the nuns, bringing that touch of rustic character of this vine. Manual harvest and rigorous sorting to keep only healthy grapes with optimal ripeness. Classic vinification in concrete tanks with 25 days maceration in the absence of stalks. Extractions are carried out by load shedding at the beginning of fermentation; we then move on to small, delicate pumping over to avoid too hard tannins. After malolactic fermentation, 80% of the wine is aged in concrete tanks for 24 months while 20% spends 24 months in 500-liter Seguin-Moreau oak barrels. Shortly before bottling, the assembly between the part in the tank and the part in the barrel takes place. Tasting: Beautiful dark color, very strong. Very intense, complex and elegant nose brought by notes of vanilla and licorice, and a hint of spice. On the palate it combines volume and softness with well-built and very elegant tannins. The barrel aging brings notes of toasted, toasted and gingerbread. Rich, enveloping, very soft and velvety. The finish is long and persistent, with great freshness. Its structure gives this wine a good aging potential from 5 to 10 years.
